Apple Cinnamon Muffins

I ate the apple muffins as an apple cream cake for the first time in the fall of 1995 in a house in Val di Non (Trentino) for breakfast. At the time, I was teaching in schools in the valley and couldn't go home in the evening as it took me two and a half hours one way. So I rented a room from a couple.

IIrma and Flavio, a charming couple, lived in an old house with a spacious courtyard, perched on a hill surrounded by apple trees, far from the village. From my bedroom, I could see deep into the valley on clear days, where apple trees dotted the landscape as far as the eye could see. Spring was particularly breathtaking, with the hills and slopes transformed into a sea of blossoms. However, autumn was my favorite season. During this time, Irma would bake her apple cinnamon cake fresh every day. Once you try it, you'll understand why it disappears so quickly and why people keep asking for more. Mrs. Irma prepared her apple cream tart as a cake, using a Ø 19 cm cake tin.

However, many years ago I decided to divide the dough. I found it easier to give the muffins to the children to take to kindergarten or school. It was also easier for them to help me bake because each child was allowed to take as many apple cinnamon muffin tins as the other, thus avoiding arguments.

Equipment

  • 9 muffin tins
  • baking paper
  • 1 baking mold Diameter 19 cm alternatively

Ingredients
 

  • 200 g flour
  • 1 egg, at room temperature
  • 170 g whipping cream, at room temperature
  • 60 g sugar
  • 40 g butter
  • ½ teaspoon cinnamon
  • ½ pkg baking powder
  • 2 apples
  • 1 pinch salt
  • sugar, powdered, for garnish

Instructions
 

  • Preheat the oven to 180 °C. Line a 19 cm Ø baking tin with baking paper for the cake.
  • Use 12 muffin paper cases for the apple muffins.
  • Wash the apples and dry with a cloth. If you can find untreated apples, you do not need to peel them. Otherwise, peel the apples first and then cut into thin slices.
  • Add the baking powder and cinnamon to the flour, mix well and sieve.
  • Beat the butter and sugar in a food processor until soft. When the butter is soft, add the egg and salt. Add the flour and cream alternately and mix all the ingredients together well.
  • For the cake, pour the mixture into the cake tin, cover with apples and bake in a preheated oven at 180°C for 40 to 50 minutes.
  • For the apple muffins, pour 2 tablespoons of batter into each tin. Cover with the apples and bake in a preheated oven at 180°C for 30 minutes.
  • Test for doneness with a skewer before removing from the oven.
  • Leave the apple muffins or apple cream cake to cool thoroughly and dust with powdered sugar.
